We love a Great British picnic! A great occasion to embrace the countryside and the great outdoors over a traditional cucumber sandwich.

With summer on the horizon, longer days, warmer temperatures we are excited to get outside and stay there for as long as possible. Gather by the lake, on the green, by the beach or next to the forest just throw down a blanket on a flat area and you are all set!
Simple sandwiches, pasta and a few pastries are all perfect options but if you fancy something a little extra, we have found some brilliant and tasty ideas for the whole family-

Why not whip up a quick homemade lemonade, the ultimate classic refreshing summer drink.
Ingredients-
6 unwaxed lemons, washed, plus extra slices to serve
125g granulated sugar
1ltr soda or sparking water, chilled
Ice cubes

Method-
Remove the zest of the lemons, then juice the lemons. Place the zest in a medium saucepan with the sugar and 400ml of eater.
Place on a low heat and bring to the boil slowly, stiffing to dissolve the sugar. Once the syrup is boiling, add the lemon juice and immediately remove from the heat. Leave to completely cool, strain into a jug and chill until needed.
To serve, mix with chilled soda or sparking water and serve over ice with lemon slices, or with strawberry slices.

Why not ditch the sandwiches and enjoy a Pesto Pasta Caprese Salad?
Ingredients-
1 ½ cups rotini pasta
3 tablespoons of pasta, or to taste
1 tablespoon extra-virgin olive oil
¼ teaspoon salt or to taste
¼ teaspoon or easy or granulated garlic
1/8 teaspoon black pepper
½ cup halved grape tomatoes
½ cup small (pearlini) fresh mozzarella balls
2 leaves fresh basil leaves, finely shredded

Method-
Boil a large pot of slightly salted water, cook the rotini at boil until tender yet firm to the bite, about 8 minutes, drain.
Mix in the pesto, olive oil, salt, garlic, black pepper in a bowl, add the rotini. Stir and coat with the mix. Fold in tomatoes, mozzarella and fresh basil.
